Spicy Banana Fritters
adapted from Chef Ed Cotton of Top Chef Season 7
Bananas:
Large bananas cut into bite size pieces (1-2″)
Sriracha, Sambal Oelek or similar chili paste
wooden skewers for serving
Batter:
2 C. flour
2 Tbs black and white sesame seeds
1 tsp. baking powder
3 Tbs sugar
salt to taste
1 TBS honey
2 L eggs
2 C. of hoppy pale ale
Dusting:
Cinnamon sugar (1:2::cinnamon:sugar)
2 cups of vegetable oil heated to 350 degrees

Prep bananas.
1. Cut and peel bananas.
2. Brush with chili paste.
Mix batter.
1. Mix dry ingredients of batter.
2. Add wet ingredients and mix until incorporated. Do not overmix! Mix like you would pancake batter. Set aside.
Dip the banana pieces in batter to coat and drop into heated oil. Move banana fritters in oil to promote even browning. Fry until golden brown. Transfer on towel-lined plate to remove excess oil. About a minute after, put fritters in serving plates and dust with cinnamon sugar.
Serve while crispy.
